  1. Hi All,

    So I grew up in New Jersey – home of amazing Italian food where pasta and bread are basic staples. The area I grew up in was spattered with amazing Italian restaurants, and no matter how hard I try, I cannot kick my addiction to great pasta and good semolina bread.

    (As far as the bread goes – I have no solutions, but here’s a great pasta recipe!)

    Penne with Pesto Sauce (2 pts per serving on weight watchers) – this recipe makes 4 servings

    1 Box Fiber Gourmet Penne cooked (
    Fiber Gourmet is great for pastas and other super high fiber carbs – their products taste amazing and they don’t ramp up your point intake on WW.

    1 Bushel of Fresh Basil
    3 or 4 cloves of Garlic (depending on how much you like garlic)
    1 tablespoon of Extra Virgin Olive Oil
    2 to 3 tablespoons of Water

    Bring water water to a boil. Dump Fiber Gourmet Pasta in the boiling water. Add salt to keep the boil alive! Cook for 7 minutes or less depending on your al dente level preference. Strain.

    While water is boiling, throw the basil leaves in a food processor if you have one – I live in a shoe box of an apartment so unfortunately there is no room in our kitchen for a food processor, but I have become very adept at finely mincing all sorts of leaves – basil, cilantro, parsley, etc. To mince the basil, take a large cooking knife and rock the knife back and forth over the basil like a boat – do this over and over till the basil is fine and pasty. Do the same thing with your garlic. Mix everything together, add the oil and the water. Mix again.

    When the pasta is finished and your sauce is finished mix everything together while the pasta is still steaming hot – this will heat up your pesto sauce.

    Voila! – Low Cal, High Fiber, Amazing Tasting Pasta!

  2. Figs and Cream Delights
    Great Low Cal Snack – total calories = ~70

    1 GG Bran Crisp Breads (12 cals)
    1 Laughing Cow Light Cheese Wedge (35 cals)
    Fresh Figs (you can use Strawberries, Pears, or any other fruit of your choice) (Calories depend on fruit/how much you decide to eat – but fruit is always good for you)

    Spread the laughing cow cheese over the crisp bread, slice up your fruit (I recommend figs) and place on top of the cheese, and enjoy!
